For your information, sago noodles are a typical Riau food, especially in coastal areas. As the name suggests, this food is made from the basic ingredient of sago which is widely grown in Eastern Indonesia.
The characteristics of this noodle are very different from noodles made using flour. The difference lies in the larger size and more transparent color.
As for the texture itself, sago noodles are also known to be chewier than wheat noodles.
On the other hand, sago noodles are also known to be more durable and can be stored better than wheat noodles even though they are not added with preservatives.
This sago noodle dish is very popular in Riau. People can eat it for breakfast, lunch or dinner. Sago noodles are also often the main dish at celebrations and formal events.
Sago noodles are usually processed with two servings, namely fried or wet. For wet sago noodles, the Malay community also calls it sago mie lech.
Sago noodles will be served with red chilies, wet shrimp, anchovies with bean sprouts, mustard greens, and spring onions and cooked with a typical Malay spice mix. The taste itself tends to be savory rather than sweet.
