Director of Culinary at Al Gusto, JHL Solitaire Hotel, Gading Serpong Chef Nalendra in Tangerang, Saturday said that Algusto Italian Dining & Bar wanted to give a new touch and add premium class meat dishes.
Where, he continued, various imported meat products are prepared from Australia, US, Japan and Sumatran Cattle.
“And the types of meat that will be used are Wagyu mb7, Tajima A4, Grass Fed Australian and Sumatran Brahman Cross,” said Nalendra to reporters, Saturday (7/10/2023)

Nalendra said that this time Signature Dry Aged is collaborating directly with experienced chefs such as Chef Rossy and the Culinary team from JHL Solitare Hotel as a presentation at Algusto Italian Dining & Bar which will provide a journey experience for those who enjoy our Signature Dry Aged.
He explained that the Dry Aged process really pays attention to its development starting from the ideal temperature between 1C-3C with a humidity level between 75 percent – 80 percent, and will be marinated from 14 days to a maximum of 240 days.
“Ideal meat is in the range of 14, 30, 45 and 60 days,” he said.
What is unique about Algusto Italian Dining & Bar is pairing Dry Aged Steak with a Signature Cocktail at Algusto Italian Dining & Bar which is made specifically for steak lovers, namely, Negroni Bianco, Fumo Zenzero and Bailico Cetriolo.
