Ingredients:
– 4 purple eggplants
– 1/2 green and red chili peppers, finely chopped
– Salt, sugar, and mushroom broth powder to taste
– Oil
Ground spices:
– 15 curly red chilies
– 3 large red chilies
– 1 medium sized tomato
How to make:
1. Cut the eggplant lengthwise, wash, soak with 1 tsp salt while squeezing slowly. Soak 20 minutes then squeeze and drain.
2. Fry with enough oil and heat, fry while turning it back and forth quickly, don’t take too long.
3. Sauté the spices until fragrant, add the eggplant, salt, sugar, and broth powder, stir well, add the paprika, stir until wilted, correct the taste.
