- 1 kilogram of chicken meat
- 10 cloves of red onion
- 5 cloves of garlic
- 3 pecans, roasted
- 1 tomato
- 25 pieces of red curly chili
- 20 pieces of red chili
- 2 teaspoons salt
- 2 teaspoons chicken stock powder
- 2 teaspoons granulated sugar
- 1 pandan leaf
- 7 lime leaves
- 3 bay leaves
- 1 turmeric leaf (optional)
- Onions to taste
- Adequate basil leaves
- 2 slices of ginger
- 2 segments of turmeric 2 lemongrass stalks
How to Make Woku Chicken
- First, puree the onion, garlic, candlenut, ginger, turmeric, red cayenne pepper, and curly chili with a little water. It doesn’t have to be too subtle.
- After that, saute the spices that have been mashed with hot oil. Add the lemongrass, scallions, and shredded lime leaves. Saute until the spices are cooked.
- Next, add pandan leaves and turmeric leaves (if any) so that the distinctive aroma of woku chicken can be smelled even more.
- When the spices are cooked, add a liter of water, stir briefly and then add the chopped chicken. Stir again until the chicken is submerged. Cook over medium heat, until the water has reduced.
- After the water boils, add the salt, chicken stock powder, sugar, and tomatoes. Cook until the chicken is really tender.
- When the chicken is tender, add the chopped scallions and basil leaves. Stir briefly then turn off the heat.
- Woku chicken is ready to be served.
Woku chicken is one of the foods that are often served on big days, therefore the cooking portion is usually cooked in large quantities. To make it more delicious, woku chicken is usually eaten with warm white rice.
