“The temperature in your refrigerator should be between 33 and 40 F (0.5-4 degrees Celsius),” says Russo.
Russo details how long vegetables can be stored in the refrigerator:
- Asparagus, the shelf life of this vegetable is quite short, even when refrigerated. You will know when the asparagus starts to dry out, namely when the tips of the stems start to look dry and wilted. Asparagus will keep for 2 to 3 days in the crisper storage box.
- Eggplant, celery, peppers, peas, artichokes, zucchini, and cucumbers will last up to a week in the refrigerator. Summer squash, pumpkin, and green beans 3 to 5 days.
- Broccoli will last between 3 to 5 days.
- Brussels sprouts will last between 3 to 5 days.
- Cauliflower will last 1 week.
- Carrots, radishes, beets, can be stored in a plastic bag and will last for 2 weeks.
- The same goes for lettuce and other leafy greens, which will last from 3 days to a week depending on how fine the leaves are.
- The mushrooms will last 3 to 5 days and should be refrigerated in a paper bag. Corn should be stored in its husk and will last between 1 to 2 days in a closed container.
